Lupin Nourish Bowl
This recipe is made with our Ground Lupin Bean for a high-protein, high-fiber, low net-carb base and topped with our gluten-free Crounons and Organic Flax Cooking Oil.
Ingredients:
- 2 cups brussels sprouts (about 12) cut in halves
- 1 carrot cut into ½-inch pieces
- ½ cup chickpeas
- Lemon slices
- 1 tbsp Carrington Farms Coconut & Olive Cooking Oil Blend
- 1 cup Carrington Farms Plain Ground Lupin Bean
- ½ cup Carrington Farms Cracked Pepper & Sea Salt Crounons
- ½ avocado, sliced into ¼ inch half moons
- 1 tbsp Carrington Farms Organic Flax Cooking Oil
- Paprika, salt and pepper to taste
Directions:
- Preheat oven to 350° F. Line a large, rimmed baking sheet with foil.
- In a large bowl, toss the brussels sprouts, carrots, chickpeas and lemon in 1 tbsp Carrington Farms Coconut & Olive Cooking Oil Blend, then sprinkle with paprika, salt and pepper.
- Transfer the vegetables to the baking sheet, spread evenly into a single layer and roast for 25-30 minutes.
- Cook Carrington Farms Ground Lupin Bean according to the package instructions.
- Divide the cooked lupin and roasted vegetables into two bowls and top each with ¼ avocado slices. Season with salt and pepper to taste.
- Drizzle ¼ tbsp Carrington Farms Organic Flax Cooking Oil over each bowl and top each with ¼ cup Carrington Farms Cracked Pepper & Sea Salt Crounons.
