Mini Chickpea Crust Pizzas

The flavorful, aromatic crust, made with our Chickpea with Za'atar flour, is rich in protein and fiber and topped with heirloom tomatoes and fresh mozzarella.


  • 1 tbsp instant yeast 
  • 1 ½ cups lukewarm water 
  • 1 tbsp sugar 
  • 1/2 tsp salt 
  • 2 tbsp Carrington Farms Organic Ghee 
  • 1 ½ cups Carrington Farms Chickpea Flour With Za’atar
  • 2 ½ cups Carrington Farms Organic Cassava Flour 


  • mozzarella pearls 
  • tomatoes
  • marinara 
  • basil



  1. Dissolve the instant yeast in lukewarm water. Mix well until combined. 
  2. Add sugar, salt, Carrington Farms Organic Ghee and mix well until combined. 
  3. Add Carrington Farms Chickpea Flour With Za’atar and whisk until there are no lumps.
  4. Mix in Carrington Farms Organic Cassava Flour 1/2 cup at a time, whisking each time until there are no lumps.
  5. The dough will be thick. Knead it for 1-2 minutes on a floured surface, and make a round ball. Put the dough in a big container and close with plastic wrap. Wait for the dough to rise, expand and double in size. This will take 1-2 hours depending on the temperature. 
  6. After the dough doubles in size, form mini pizzas around 1/8 inch thick. Spread marinara on top of each, and top with mozzarella pearls and tomatoes. Bake for 20 minutes at 380F.
  7. Top with fresh chopped basil.
