Mini Chickpea Crust Pizzas

The flavorful, aromatic crust, made with our Chickpea with Za'atar flour, is rich in protein and fiber and topped with heirloom tomatoes and fresh mozzarella.
Ingredients:
- 1 tbsp instant yeast
- 1 ½ cups lukewarm water
- 1 tbsp sugar
- 1/2 tsp salt
- 2 tbsp Carrington Farms Organic Ghee
- 1 ½ cups Carrington Farms Chickpea Flour With Za’atar
- 2 ½ cups Carrington Farms Organic Cassava Flour
Toppings:
- mozzarella pearls
- tomatoes
- marinara
- basil
Directions:
- Dissolve the instant yeast in lukewarm water. Mix well until combined.
- Add sugar, salt, Carrington Farms Organic Ghee and mix well until combined.
- Add Carrington Farms Chickpea Flour With Za’atar and whisk until there are no lumps.
- Mix in Carrington Farms Organic Cassava Flour 1/2 cup at a time, whisking each time until there are no lumps.
- The dough will be thick. Knead it for 1-2 minutes on a floured surface, and make a round ball. Put the dough in a big container and close with plastic wrap. Wait for the dough to rise, expand and double in size. This will take 1-2 hours depending on the temperature.
- After the dough doubles in size, form mini pizzas around 1/8 inch thick. Spread marinara on top of each, and top with mozzarella pearls and tomatoes. Bake for 20 minutes at 380F.
- Top with fresh chopped basil.
