Olympic Ring Cupcakes

Ingredients:
- 6 large eggs
- ⅔ cup pure maple syrup
- ½ cup Carrington Farms Organic Ghee
- 2 tbsp milk
- 2 tsp vanilla extract
- ½ cup Carrington Farms Organic Coconut Flour
- ¼ cup Carrington Farms Lupin Flour
- 1 scoop Simply Teras Organic Plain Unsweetened Whey Protein
- 1 tsp baking powder
- ½ tsp salt
- 1 cup blueberries
Olympic Apple Ring Toppers
- 12 apples, cored and sliced into rings
- 1 cup white chocolate chips
- ½ cup dark or milk chocolate chips (for black ring)
- 2 tsp Carrington Farms Organic Coconut Oil
- 1 tsp Carrington Farms Organic Goji Berry Powder (for red ring)
- 1 tsp Carrington Farms Organic Matcha Powder (for green ring)
- 1 tsp blue spirulina (for blue ring)
- ¼ tsp turmeric (for yellow ring)
- Optional: dye-free colored sprinkles to match each ring color (brown, red, green, blue, yellow)
Clean ingredient store-bought white frosting
Directions:
- Preheat oven to 350F. In a small bowl, beat the eggs, pure maple syrup, Carrington Farms Organic Ghee, milk, and vanilla extract.
- In a separate bowl, combine the Carrington Farms Organic Coconut Flour, Carrington Farms Lupin Flour, Simply Teras whey protein powder, baking powder, and salt.
- Add flour mixture to egg mixture; stir to combine. Fold in the blueberries.
- Pour into a silicone muffin tray. Bake for 18-20 minutes until a toothpick comes out clean. Let the muffins cool.
- Once cooled completely, frost cupcakes.
- In a small dry microwave safe bowl, place white chocolate and 1 tsp Carrington Farms Organic Virgin Coconut Oil. Microwave on 50% power for 30 seconds then stir. Continue microwaving in 15-30 second intervals until chocolate is smooth.8.Divide the white chocolate into 4 separate bowls and add the powders as follows and stir until well combined:
- Bowl 1 - add 1 tsp Carrington Farms Organic Goji Berry Powder
- Bowl 2 - add 1 tsp Carrington Farms Organic Matcha Powder.
- Bowl 3 - add 1 tsp blue spirulina
- Bowl 4 - add ¼ tsp turmeric - Melt milk or dark chocolate with 1 tsp Carrington Farms Organic Virgin Coconut Oil in a small dry microwave safe bowl, place with 1 tsp Carrington Farms Organic Virgin Coconut Oil. Microwave on 50% power for 30 seconds then stir. Continue microwaving in 15-30 second intervals until chocolate is smooth.
- Line baking sheet with parchment paper. Using a spoon, spread colored chocolates on individual apple slices to resemble the 5 different Olympic ring colors (black, red, green, blue, yellow). Add optional sprinkles.
- Freeze for 10 minutes. Remove from freezer and top each cupcake with a different ring color. Enjoy!
