Roasted Pistachio Chocolate Truffles

Directions:

  1. Preheat the oven to 350°F and toast pistachios on a baking sheet for about 5 minutes.
  2.  Rehydrate dry dates in boiling water if needed. In a food processor, blend walnuts and 3/4 cup of pistachios into a meal.
  3.  Set aside, then pulse the remaining pistachios into coarse pieces for topping. Process dates into a sticky paste, adding cocoa powder, vanilla, salt, and the ground nut mixture. Scoop and roll the mixture into balls and freeze for 10-15 minutes.
  4.  Melt chocolate and Carrington Farms Organic Coconut Cooking Oil in the microwave, then dip truffles into the chocolate and top with crushed pistachios.
  5.  Let set and enjoy!
