Superfood Christmas Cookies
These fun and festive cookies still have the same buttery taste as most sugar cookies but come with added nutrients and superfood frosting.
Ingredients:
For the cookies:
- 3 cups almond flour
- 1/2 cup Carrington Farms Organic Coconut Flour
- 1/4 tsp baking soda
- 1/4 tsp kosher salt
- 1/2 cup Carrington Farms Organic Ghee, melted
- 1/2 cup granulated sugar
- 2 tbsp honey
- 2 eggs
- 1 tbsp vanilla extract
For the frosting:
- 1/2 cup Carrington Farms Organic Ghee
- 1 ½ cups powdered sugar
- 1/2 tsp Carrington Farms Beetroot Powder
- 1/2 tsp Carrington Farms Matcha Powder
- Sprinkles
Directions:
To make the cookies:
- In a large bowl, whisk together almond flour, Carrington Farms Organic Coconut Flour, baking soda, and salt.
- In another large bowl, combine melted Carrington Farms Organic Ghee, sugar, honey, eggs, and vanilla. Whisk until smooth.
- Gradually add the dry ingredients to the bowl with the wet ingredients and fold in using a rubber spatula. Continue to stir until no dry spots remain and a soft dough has formed.
- Wrap the dough in plastic wrap and chill overnight, or for at least 1 hour.
- When you are ready to bake, preheat the oven to 350° F.
- Remove the cold dough from the refrigerator, divide it in half, and place half on a sheet of parchment paper, dusting it with coconut flour if needed to prevent sticking. (Re-wrap the remaining half of dough and refrigerate until you’re ready to use it.) Dust the top with a little more coconut flour and roll the dough into a large rectangle about 1/4” in thickness.
- Use Christmas cookie cutters to punch out shapes, and transfer the cookies to a parchment lined baking sheet. *Repeat with the rest of the dough*.
- Bake for 7-9 minutes until the edges are lightly golden brown. Let the cookies cool on the pan. Recipe adapted from Ambitious Kitchen
To make the frostings:
- In a large bowl, melt the Carrington Farms Organic Ghee.
- Whisk in the powdered sugar until the frosting is smooth and spreadable.
- Divide the frosting into three bowls. In one bowl, whisk in 1/2 tsp of Carrington Farms Matcha Powder and in another, whisk in 1/2 tsp Carrington Farms Beetroot Powder. Leave the third bowl of frosting white.
- Decorate cookies with frostings as desired and then let set for about 10 minutes, until frosting is firm.
*If at any point, the frostings become too thick, microwave them for about 10 seconds and whisk again until thinned and smooth.
