Sweet Potato Casserole

Made with our Sweet Potato Flour and Organic Coconut Oil, this lightened up version of traditional sweet potato casserole has that rich creamy texture we all know and love.

For the Topping:

  • 1 cup brown sugar
  • ¼ cup butter, melted
  • 2 ½ cups chopped pecans
  • 1 tsp cinnamon


  1. Preheat the oven to 400.
  2. In a large bowl, whisk the egg and brown sugar.
  3. Add the cinnamon, Carrington Farms Organic Coconut Cooking Oil, milk, and vanilla. Whisk to combine.
  4. Stir in the mashed sweet potatoes.
  5. Fold in the Carrington Farms Sweet Potato Flour until combined.
  6. Spread mixture into the bottom of a greased 9x13 pan.
  7. In a small bowl, mix together the topping ingredients until combined. Spread on top of the sweet potato mixture.
  8. Bake at 400 for 30 minutes.
