Basil and Ricotta Bruschetta

Ingredients:
- 1 French Baguette
- ¼ cup of Carrington Farms Coconut and Avocado Cooking Oil Blend
- Salt and Pepper to Taste
- ¼ cup Basil Pesto
- 1 cup Ricotta Cheese
- 2 tbsp Heavy Cream
- 1 Pint Tri-Colored Cherry Tomatoes
- Fresh Basil, chopped
- Flaky Salt, optional
Directions:
- Slice the baguette on a diagonal into ¾ inch slices.
- Brush with Carrington Farms Coconut Cooking Oil Blend and sprinkle with salt and pepper. Place under the broiler until golden brown.
- In a large bowl, combine the pesto, ricotta, heavy cream, and a pinch of salt. Whip with a hand mixer until well combined, light, and fluffy-about 3 minutes.
- Quarter the cherry tomatoes and mix them with salt and pepper and 1 teaspoon of fresh chopped basil.
- Spread 2-3 tbsp of the basil ricotta on the toasts, then top with a heaping spoonful of cherry tomatoes, and a sprinkle of flaky salt.
