Basil and Ricotta Bruschetta

  1. Slice the baguette on a diagonal into ¾ inch slices.
  2. Brush with Carrington Farms Coconut Cooking Oil Blend and sprinkle with salt and pepper. Place under the broiler until golden brown.
  3. In a large bowl, combine the pesto, ricotta, heavy cream, and a pinch of salt. Whip with a hand mixer until well combined, light, and fluffy-about 3 minutes.
  4. Quarter the cherry tomatoes and mix them with salt and pepper and 1 teaspoon of fresh chopped basil.
  5. Spread 2-3 tbsp of the basil ricotta on the toasts, then top with a heaping spoonful of cherry tomatoes, and a sprinkle of flaky salt.
