Detox Bowl

Ingredients:
- 1 large sweet potato, diced
- 2 tbsp Carrington Farms Organic Coconut Cooking Oil
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp salt
- 1 pound ground chicken
- 1 egg
- 1/4 cup onion, finely diced
- 1/4 cup breadcrumbs
- 1/4 cup Greek yogurt
- 2 tsp Carrington Farms Mushroom Powder
- 1 tsp salt
- 2 tbsp
Carrington Farms Organic Coconut Cooking Oil
- 7-ounce bag Carrington Farms Ground Lupin Bean
- 6 cups water
- 1 tsp salt
- 1 cup greek yogurt
- 1/2 lemon, juiced
- 1 tbsp honey
- 1/2 tsp salt
- 1 tbsp chives, finely chopped
- 2 tsp Carrington Farms Holy Basil Seeds
- 1 bunch of Kale, de-stemmed and roughly chopped
Directions:

Preheat the oven to 425°F. Wash, dry, peel then dice the sweet potato and add to a parchment lined baking sheet. Drizzle with Carrington Farms Organic Coconut Cooking Oil then season with garlic powder, onion powder and salt. Gently toss to coat evenly then roast in the preheated oven for 10-15 minutes or until fork tender.

In a large mixing bowl, mix together ground chicken, egg, finely diced onion, breadcrumbs, Greek yogurt, Carrington Farms Mushroom Powder, and salt. Roll into small meatballs and place on a parchment lined baking sheet. Coat hands with Carrington Farms Organic Coconut Cooking Oil then roll each meatball to coat and smooth out. Bake in the oven at 375°F for 20-25 minutes or until fully cooked through.

To a medium-sized pot add Carrington Farms Ground Lupin Bean, water and salt. Cover then bring to a boil. Boil uncovered for 3 minutes and strain.

In a small bowl combine, greek yogurt, lemon juice, honey, salt, chives, and Carrington Farms Holy Basil Seeds. Refrigerate until ready to serve.

Wash, de-stem and roughly chop kale.

To serve, add the roasted sweet potato, cooked Carrington Farms Ground Lupin Bean, chicken meatballs, and kale to a bowl. Top with the yogurt sauce and top with more chives and Carrington Farms Holy Basil Seeds.

For meal-prep, store everything in containers for easy heat-up but keep the yogurt sauce separately.
