Healthy Granola Bars
Unlike store-bought bars, this recipe offers crunch and flavor bundled with omega-3s, fiber, antioxidants, and MCTs.
Ingredients:
- 2 tbsp Carrington Farms Organic Milled Flax Seeds
- 2 tbsp Carrington Farms Organic Chia Seeds
- ¼ cup Carrington Farms Organic Coconut Cooking Oil
- 2 cups rolled oats
- 5 medjool dates, pitted & chopped
- ¼ cup raw pecans, chopped
- ¼ cup golden raisins, chopped
- ¼ cup sliced almonds
- ½ cup creamy peanut butter
- ⅓ cup maple syrup
- ¼ tsp cinnamon
Directions:
- To a medium size pot, add the Carrington Farms Organic Coconut Cooking Oil, peanut butter, maple syrup, and cinnamon. Heat on medium heat until warm and combined, stirring frequently.
- Next, remove from the heat and add the Carrington Farms Organic Milled Flax Seeds, Carrington Farms Organic Chia Seeds, and the remaining dry ingredients then mix to combine.
- Line a square pan with parchment paper then add the mixture, spread out evenly and press into the pan.
- Refrigerate for a minimum of 30 minutes then gently remove from the pan and cut into bars.
- Store in an air-tight container in the refrigerator.
