Strawberry Chicken Salad

Ingredients:

Salad Dressing:

Directions:

  1. Add chicken breasts to a container then sprinkle with salt, ground black pepper, chopped rosemary, and Carrington Farms Organic Coconut Cooking Oil. Evenly coat the chicken breast in the oil and seasoning then cover and allow to marinate for 10-20 minutes.
  2. Add Carrington Farms Ground Lupin Bean and water in a small pot and cook for 3 minutes. Remove from heat and allow to cool completely.
  3. Heat a large skillet on medium-high then add 1 Tablespoon of Carrington Farms Organic Coconut Cooking Oil. Once the oil is hot, add the marinated chicken breasts. Cook on medium heat for 5-7 minutes on each side. The chicken is fully cooked once it reaches an internal temperature of 165°F. Move cooked chicken breasts onto a cutting board and allow to rest for 10 minutes before slicing.
  4. To make the salad dressing, add Carrington FarmsOrganic Flax Cooking Oil, fresh lemon juice, honey, mustard, and salt to a jar with a lid. Tighten the lid and shake well. 
  5. To assemble the salad, add the spring greens to a large salad bowl then top with cooked Carrington Farms Ground Lupin Bean, sliced chicken, sliced strawberries, crumbled feta cheese, and Carrington Farms Organic Crounons. Lastly, drizzle with salad dressing and gently toss.
